Choose your dishes

You can choose which recipes you would like from the SimpleCook website. The range includes vegetarian, gluten-free and the light option of meals under 600kcals.  I chose the Nyonya style curry (fusion of Malaysian, Chinese and Indonesian food), Jambalaya (a rice-based cajun dish with chicken and chorizo from Louisiana, USA), Vietnamese Pork (sweet and sticky pork) and Malay Laksa (spicy fragrant rice noodle creamy curry). All sounded delicious to me!

Nyonya Curry

I chose the Nyonya curry to try first. I only needed to source 5 ingredients. Potatoes, boneless chicken thighs, light coconut milk, green beans and a lime. The chicken I had in the freezer, potatoes in the pantry. I swapped in sprouting broccoli for the green beans and a quick trip to the shop for the coconut milk and a lime. The recipe card was simple to read and follow.

It only took 20 minutes and the final dish tasted great. A fragrant, coconut, slightly hot curry. The squeeze of lime of the top gave it an extra dimension. It would usually put me off making a meal like this from scratch when you have to source all the spices, so this way is ideal.

We tried the Jambalaya next, a smoky spicy rice dish with chicken and chorizo. As we were cooking for 4, then we added extra chicken and rice and it still tasted great.

Next, I treated my mother in law to the Laksa which she enjoyed and even my 7 year old liked it (the fussy 4-year-old didn’t)! That was delish too.

Vietnamese Pork

The last was the Vietnamese Pork. The dietitian in me had to add extra vegetables to this dish so I added mushrooms and courgettes and mixed them in the sweet sticky sauce with the pork. Again this was delicious.

You have the option to have the boxes delivered weekly, fortnightly or monthly. I chose monthly as making one a week was perfect for me. You can choose what you get in your box or you can leave it as a surprise and get something you wouldn’t have chosen. I left it as a surprise this month and I am looking forward to trying my Chicken Makhani (butter chicken), Moqueca de Peixe (Brazilian fish stew), Beef Stroganoff (Russian beef stew) and Spinach and Paneer curry (from India).

These boxes of a great way to get you cooking something different that you might not normally get around to making and all 4 dishes were really tasty.
