The summer is past, the kids have started school again and soon it will be dark in the mornings… (well if you live in the UK like me!). A warm healthy breakfast is required to get you going in the morning. It’s to complicated to be getting the weighing scales out and following a recipe first thing in the morning I hear you cry…? Well here is the solution, a none weighing recipe to make porridge. Porridge made from porridge oats is full of fibre, keeping you fuller for longer.
Firstly choose a cup or mug to measure out with. There maybe a bit of trial and error with this bit. I use a child’s mug (holds about 200mls), which makes 3 small portions.
1 cup of oats
Double the amount of milk. Some people prefer 1/2 milk, 1/2 water.
Add a handful of raisins or other dried fruit (sualtanas, apricots) or fresh fruit (chopped banana, blueberries, strawberries).
If you want more taste then you can add 1/2 teaspoon of spice.
Simmer on the hob and keep stirring to make sure it doesn’t stick. Once it goes thick it is ready.
If you have added fruit / dried fruit then it may be sweet enough, but if not a little drizzle of honey or sprinkle of sugar will sweeten it up. My girls like a little milk on top too.
